    I grew up learning to spit roast pig from my father and family. Our Micronesian culture prefers spit roasting over underground roasting and if you have had both, you will understand why we prefer spit roasting. Quick question, where did you get/rent the spit to roast the pig? We created our own rig growing up but that has since been lost in the “borrowing” that families do. :)

    Guma, I like the underground method as well, however, some people don’t like a chef digging a hole in their backyard. Here in Portland, I rented the spit at Barbur Rentals. If you call large equipment/party rental places they should point you in the right direction. Take care, TCA
