Point Reyes Blue Cheese and Bacon Tater Tots: (yields about 50 Tots )
4 Baking Potatoes

1/4 Cup Potato Starch (or flour)
1/2 Tablespoon Salt
1 Teaspoon black pepper
5 oz of Point Reyes Blue Cheese, softened
1 bunch of chives

Preparation:
Preheat oven to 350F. With a fork, pierce potatoes. Bake potatoes on foil-lined baking sheet for 20-30 minutes until fork tender.
Place potatoes on a cooling rack until cool enough to handle. Peel and grate potatoes with box grater.
